Turkey
& Noodles & Cheese
Ingredients:
- 1 package of noodles
- 16 oz. bag of frozen vegetable blend
(broccoli, cauliflower & carrots)
- 1 can cream of mushroom soup with
roasted garlic
- 1/2 cup milk
- 1/3 cup water
- 1/2 teaspoon pepper
- 2 cups Cheddar and Monterey Jack
blended grated cheese
- 2 cups cooked diced turkey
- 1/4 cup shredded Parmesan cheese
Directions: Cook noodles according to package
directions. Add frozen vegetables and continue cooking for 5
minutes. Drain well, set aside. Add soup, milk, water, pepper,
and cheddar cheese to pan. Cook, stirring constantly over medium
heat, until cheese is melted. Stir in turkey, noodles and
vegetables. Heat through. Sprinkle Parmesan cheese over noodle
mixture before serving. Makes 6 to 8 servings.
Note: You can skip the vegetable
blend and add the leftover vegetables from Thanksgiving dinner when you
stir in the turkey. |

Cole Slaw
|
Ingredients:
3/4 of a small head of cabbage sliced as thinly as possible
5 oz. olive oil (extra virgin preferred)
4 oz. red wine vinegar
Juice of one lemon
Salt & Pepper to taste
1/2-cup chopped fresh parsley
|
Directions:
Place the sliced cabbage in a large
mixing bowl. Combine the remaining ingredients and blend
thoroughly. Season to taste. Pour over cabbage and toss
well.

Egg Nog - Non-Alcoholic
Ingredients:
- 4 eggs, well beaten
- 1 can sweetened condensed milk
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 1 quart milk
- 1/2 pint of whipping cream
- 1 tablespoon powdered sugar
Directions:
- Combine the first five ingredients and
blend well.
- Right before serving, whip the whipping
cream into soft peaks.
- Sweeten with powdered sugar.
- Fold in whipping cream when ready to
serve.

Green Bean Casserole
|
|
Ingredients:
1 can Cream of Mushroom Soup
1/2-cup Milk
1 Teaspoon Soy sauce
Dash pepper
4 cups cooked cut green beans
1-1/3 cup French's French Fried Onions
|
Directions:
Mix soup, milk, soy sauce, pepper, green beans and
2/3-cup French fried onions in 1-1/2 qt. casserole. Bake at 350°F. for 25
minutes or until hot. Stir and sprinkle with remaining onions. Bake
another 5 minutes.

Pumpkin
Pie - With recipe for Pie Crust
Pie Crust (Preheat oven
to 350 degrees.)
- 1-1/2 cups of all-purpose flour
(plus more for dusting)
- 1 tablespoon sugar
- 1/4-teaspoon salt
- 1/2-cup cold Crisco shortening
(regular or butter flavor), cut in chunks
- 1 egg, separated (yolk for the
pie dough, white for the glaze
- 3 tablespoons ice water, plus
more if needed
In food processor, pulse flower,
sugar and salt. All cold shortening in bits and pulse until
dough resembles cornmeal. Add egg yolk and ice water (more if
needed); pulse for a second. Knead dough into ball. Wrap
in plastic, flatten into disc and shill for 30 minutes. When
ready, let soften on counter. Dust counter and rolling pin with
flour. Roll dough into 12-inch circle and lay in greased pan,
pressing bottom and edges. Trim excess dough and freeze for 15
minutes. Prick pie crust bottom with fork and line with
foil. Fill with dried beans (this keeps the dough flat.)
Bake for 30 minutes. Remove beans and foil. Bake 1
minute more. Beat egg white and 1 tablespoon of ice
water. Brush on bottom and sides.
Filling
- 2 eggs
- 1/2-cup brown sugar
- 1 cup heavy cream
- 1 teaspoon cinnamon
- 2 teaspoons pumpkin pie spice
- pinch salt
- 2 cups canned pumpkin
In large bowl, beat eggs with brown
sugar, heavy cream, cinnamon, pumpkin pie spice, and salt.
Stir in canned pumpkin. Pour in shell. Bake for 30-40
minutes. Filling should jiggle slightly.
Serve warm or room temperature with
whipped cream.

at making pie crust (so we usually use frozen pie crusts) - we
thought the idea with the beans was interesting and we might give it
another try making our own crust. |

Pumpkin
Pie (using frozen crust)
Ingredients:
- (1) 15-oz. can of pumpkin (2
cups)
- (1) 14-oz. can of sweetened
condensed milk
- 2 eggs
- 1 teaspoon ground cinnamon
- 1/2-teaspoon ground ginger
- 1/2-teaspoon ground nutmeg
- 1/2-teaspoon salt
- (1) 9-inch unbaked pie shell
Directions: Preheat oven to 450 degrees. With wire
whist, beat pumpkin, condensed milk, eggs, spices and salt.
Pour into crust. Bake 15 minutes. Reduce oven heat to
350 degrees and continue baking 35 to 40 minutes or until knife
inserted 1 inch from crust comes out clean. Cool. Serve
with whipped cream. Keep leftover refrigerated. |

Waldorf Salad
|
|
Ingredients:
1/4 cup mayonnaise
1/4 cup plain yogurt
2 teaspoons sugar
2 teaspoons lemon juice
2 apples
2 large celery stalks
1/2 cup chopped walnuts
|
Directions:
In small salad bowl, combine mayonnaise, yogurt and lemon juice, to taste. Core apples, cut into bite-size pieces, dice
celery. Add both to salad bowl, fold in nuts. Chill up to two hours. Toss before serving.

Candied
Yams
Ingredients:
- (1) 40-oz. can of cut yams
- 1/2-cup of butter
- 2/3-cup of white or brown sugar
- 2/3-cup of syrup from can
Directions: Place yams in a
shallow baking dish.
Combine syrup from can, sugar and butter in a saucepan, stirring to
a boil to thicken. Pour sauce over yams. Bake at 350 degrees for 20
to 30 minutes. |

A Little Bit of Humor...
One year at Thanksgiving my Mom went to my sister's house for the traditional feast. Knowing how gullible my sister is, my mom decided to play a trick. She told my sister that she needed something from the store. When my sister left, My mom took the turkey out of the oven, removed the stuffing, stuffed a
Cornish game hen, and inserted it into the turkey, and re-stuffed the turkey. She put it back in the oven.
When it was time for dinner, my sister pulled the turkey out of the oven and
proceeded to remove the stuffing. When her serving spoon hit something, she reached in and pulled out the little bird.
With a look of total shock on her face, my mother exclaimed, " Patricia, you killed a pregnant bird!"
At the reality of this horrifying news, my sister started to cry. It took the whole family two hours to convince her that turkeys lay eggs.
