1/27/04** Thanks Carol for
submitting this new recipe! Can't wait to try it!
Note from Carol: "Sometimes I feel like I don't have time to turn on the oven, let alone cook. One day I needed supper
asap. I decided to make mac & cheese. While the water was heating, I decided that wouldn't quite do. So I looked in the cupboard and saw mushroom soup, which by the way is good if you add it to mac & cheese when you add the milk, cheese mix, & butter (don't add extra milk, just soup out of the can.) Then I thought of more. I call it:
"Carol's Cheating TNC" (tuna noodle casserole.)"

Note from Linda: Some time ago, I made tuna
noodle casserole for dinner. I had put the casserole in the oven to bake
and started cleaning up the kitchen (I'm a messy cook - ha-ha!) While
cleaning up, I found the can of tuna that I had completely forgot to include in
the recipe. Guess what! The dinner turned out just fine and now I
make some of these recipes and leave out the tuna on purpose!

Tuna Noodle Casserole
Linda &
Rich's Version - Healthy
|
Ingredients:
-
1 pkg. No-Yolk Noodles
-
1 can Campbell's Healthy Request Cream of Mushroom Soup
-
1 soup can skim milk
-
1 pkg. frozen oriental stir-fry veggies
-
1 medium onion, chopped
-
1 can tuna, drained & flaked
-
Splash of Worcestershire Sauce
-
Sprinkle of bread crumbs
- Optional: Shredded cheese of your
choice
This is an easy meal to make with ingredients you probably have on hand
already. Uses a lot of dishes, but they are easy to clean. Tasty
meal even if you don't care for tuna 'cause we only use one can and
sometimes omit the tuna completely. Enjoy!
Oh, a friend of mine substitutes the bread crumbs with
crushed potato chips. That's tasty, too!
|
Directions:
Cook noodles according to package directions. While water starts
to boil for noodles and during cooking, saute onions and place frozen
veggies in pan of water to simmer while you're preparing everything
else. In another pan, prepare soup with skim milk. Add
Worcestershire Sauce to soup. Add sauteed onions to soup. Drain
noodles and place in the largest bowl you have as mixing the ingredients
well is important. Pour soup mixture into noodles and stir. Pour
about 1/2-cup to 3/4 cup of water in pan that you cooked soup in to use what
remains on side of pan. Pour into mixture. Add tuna. Mix
well. If you care to add a little cheese, add now and mix well
again. Drain oriental vegetables and add to noodle mixture. Mix
well. Pour into 9 x 13 baking pan or casserole dish. Sprinkle
top with a little more cheese (if desired) and with bread crumbs. I always
have enough left over to make a smaller pan, too which I freeze for another
quick meal. Cover with aluminum foil and bake in 350 over for about
1/2-hour.

A Little Bit of Tuna Humor...
Samuel was a good and pious man, and when he passed away,
the Lord himself greeted him at the pearly gates of Heaven.
"Hungry, Samuel?" the Lord asked.
"I could eat," said Samuel. The Lord opened a can of tuna,
and they shared it.
While eating this humble meal, Samuel looked down into Hell
and noticed the inhabitants devouring enormous steaks, pheasant, pastries and vodka.
The next day, the Lord again asked Samuel if he was hungry,
and Samuel again said, "I could eat." Once again, a can of tuna was opened and shared, while down below Samuel noticed
a feast of caviar, champagne, lamb, truffles, brandy and chocolates.
The following day, mealtime arrived and another can of tuna
was opened. Meekly, Samuel said, "Lord, I am very happy to be in Heaven as a reward for the good life I lived. But, this
is Heaven, and all I get to eat is tuna. But in the Other Place, they eat like Kings. I just don't understand."
"To be honest, Samuel," the Lord said, "for just two
people, does it pay to cook?"
