Barbequed Ribs
Ingredients:
3 pounds short ribs (or chicken)
2 cups chicken broth
2 cups water, or enough to barely cover ribs
1 tablespoon brown sugar
1/4 cup cider vinegar
1/4 cup catsup
2 tablespoons tomato paste
1 tablespoon dry mustard
1 teaspoon Worcestershire sauce
1/4 teaspoon ground cloves
1 teaspoon chili powder
1/4 teaspoon cayenne pepper
Directions:
The day before grilling the ribs, put the sugar and vinegar
in a pot large enough to hold the ribs and place over medium
heat on top of the stove. Cook until the vinegar reduces and
forms a syrup with the sugar, about 8 minutes. Watch carefully
as the syrup will suddenly darken in color. Immediately add
broth, water, catsup, tomato paste, mustard, Worcestershire,
cloves, chili powder and pepper and bring to a boil. Add the
ribs and cook 20 minutes. (For chicken, cook for 10 minutes.)
Remove from heat, remove the ribs from the liquid and place
covered in the refrigerator. Cook the liquid over medium
heat until it becomes thick and syrupy.
Day of Grilling: Place the ribs on the grill so they are not
directly over the coals or flame and cover the grill so that
smoke collects inside. If your grill does not have a cover,
improvise one out of aluminum foil. Cook for 40 minutes,
basting with barbecue sauce every 10 minutes. When ribs are
well heated, remove to a platter and serve.
* Serve with extra sauce on the side.

Basic Meat
Loaf Recipe
Ingredients:
- 1-1/2 lbs. ground beef (or substitute
portions of the ground beef with ground pork or venison)
- 1 cup tomato juice (or ketchup, spaghetti
sauce, barbeque sauce, canned pureed tomatoes, or salsa)
- 3/4-cup bread crumbs (or substitute with
uncooked oatmeal)
- 1 egg (or 2 egg whites) or egg substitute
- 1/4-cup onion, chopped
- 1/4-cup green pepper, chopped (optional)
- 1/2-tsp. salt (optional)
- 1/4-tsp. black pepper
Directions:
Combine all ingredients, mixing thoroughly.
Spray and 8" x 4" loaf pan with non-stick cooking oil spray. Put
meat mixture in pan and press and shape into pan. Bake 1 hour at 350
degrees or until no longer pink. Drain off excess fat. Let stand 5
minutes before slicing.
Variations: Top meatloaf with cheese,
ketchup or barbeque sauce during last 5 minutes of baking.

Bacon & Potato Bake
Ingredients:
- 1 lb. bacon
-
1 onion, chopped
-
8 eggs, beaten
-
1 lb. Russet potatoes, peeled, grated
-
2-3/4 cups sharp cheddar cheese, grated
-
1 dash pepper
Directions:
Preheat oven to 350F. Grease 9" x 13" glass baking dish. Microwave bacon, remove. Add onion to bacon fat, microwave; remove. Combine eggs, potatoes, cheese, and pepper. Crumble bacon and mix into egg mixture. Add onions. Pour into prepared baking dish. Bake until center is set, about 45 minutes. Cut into squares.

To bake a moist ham: Empty a can of Coca-Cola into the baking pan, wrap the ham in aluminum foil, and bake. Thirty minutes before the ham is finished,
remove the foil, allowing the drippings to mix with the Coke for a delicious brown
gravy.

Roast
Pork Loin With Pear Stuffing
Ingredients:
- 1 tablespoon vegetable oil
- 1/4-cup chopped onion
- 1 package (10 oz.) frozen chopped
spinach, thawed, drained and squeezed dry
- 1 cup soft bread crumbs
- 1 can (15 oz.) pears, drained and cut
in 1/4-inch diced
- 1/2 cup toasted pine nuts or walnuts
- 1/2-teaspoon salt
- 1/2-teaspoon rubbed sage
- 1/4-teaspoon pepper
- 1/4-teaspoon thyme leaves
- 1 boneless pork loin roast (4 pounds)
Directions:
- In medium skillet, heat oil over
medium heat until hot. Add onion. Cook and stir until
onion is softened (about 3 to 5 minutes.)
- Remove from heat. Stir in
spinach, bread crumbs, pears, nuts, salt, sage, pepper and
thyme. Set aside.
- Cut pocket lengthwise in roast to 1/2
inch of ends. Spoon stuffing into pocket, then tie roast with
string.
- Season with salt and pepper.
- Place on rack in large roasting
pan. Bake at 325 degrees for 2 hours or until meat thermometer
registers 160 to 170 degrees. Remove from oven and let stand
for 15 minutes before slicing.
Makes 10 servings. |

Directions:
Add water to cover meat. Marinate in
refrigerator to a minimum of 3 days, turning occasionally. When ready to
cook, remove from brine, rinse with water. Punch six holes in meat,
placing a sliver of garlic in each hole. Lay three or four strips of bacon
across top of meat. Place in cooking bag. Sprinkle 3 tbs. of onion soup
mix on top of meat, then add 3 cups of water. Cook in over at 350 degrees
for 2 to 2-1/2 hours. Be sure to punch 2 or 3 holes in bag before placing
in oven. |

A frustrated wife was fed up each time she asked her husband what he wanted for dinner. She had a lot of things in the freezer but he never asked for those things. So she decided to change her system for labeling homemade freezer meals.
She used to carefully note in large clear letters, "Meat loaf" or "Pot Roast" or "Steak and Vegetables" or "Chicken and Dumplings" or "Beef Pot Pie."
Now she to stocks the freezer with what he really likes. If you look in there, you'll see a whole new set of labels. You will find dinners with neat, legible tags that say: "Whatever," "Anything," "I Don't Know," "I Don't Care," "Something Good," or "Food."
Her frustration is reduced, because no matter what her husband replies when she asks him what he wants for dinner, she will have it on hand.
