Crock Pot Chicken
|
Marinade Ingredients
- 2 tablespoons frozen orange juice
-
2 cups chicken stock
-
1 teaspoon salt
-
1/4-teaspoon pepper
-
1/2-cup tomato paste
-
2 tablespoons soy sauce
-
2 tablespoons brown sugar
-
2 cloves garlic -- minced
-
1 dash allspice
|
Remaining Ingredients:
-
4 pounds chicken -- breasts and thighs
-
1/4-pound mushrooms -- sliced
-
2 tablespoons margarine or butter
-
11 ounces (1 can) mandarin orange
sections -- drained
-
1/2 medium/large bell
pepper -- sliced lengthwise
-
1/4-teaspoon ground ginger
-
3 tablespoons cornstarch
-
1/4-cup cold milk
-
1/4-cup cold water
|
The night before you plan on slow- cooking your dinner, mix together the marinade ingredients in a large,
closeable container (large enough to also hold the chicken pieces.) When marinade is thoroughly mixed, add the chicken, close container and refrigerate until morning.
In the morning place the chicken in the crock pot and add marinade up to about an inch from the top of the container. Set the cooker on low and cover.
6 to 8 hours later, turn the cooker to high. About an hour later,
saute the sliced mushrooms in the margarine or butter. Then add the mushrooms (with pan juices), mandarin sections, green pepper and ginger into the slow cooker and stir thoroughly. Mix together the cornstarch, milk and cold water, then gradually add into the slow cooker while stirring until the entire mixture thickens a bit.
Re-cover the crock pot and let simmer for 15 to 30 minutes until serving. Serve with baby carrots, new potatoes or veggies of your choice.

Alpine Chicken

2 tsp. chicken bouillon granules

1 tbsp. chopped fresh parsley
-
3/4-tsp. poultry seasoning
-
1/3-cup diced Canadian bacon
-
2-3 carrots, thinly sliced
-
1-2 ribs celery, thinly sliced
-
1 small onion, thinly sliced
-
1/4-cup water
-
1 broiler-fryer chicken (about 3 lbs.) cut up
-
1 (11 oz.) can condensed cheddar
cheese soup
-
1 tbs. all-purpose flour
-
1 (16 oz.) pkg. wide egg noodles, cooked and drained
-
2 tbs. sliced pimento
-
2 tbs. grated Parmesan cheese
- In a small bowl, mix bouillon granules, chopped parsley, and poultry seasoning; set aside.
- Layer in a slow cooker, in
order: Canadian bacon, carrots, celery and onion. Add water.
- Remove skin and excess fat from chicken; rinse and pat dry. Place white meat in slow cooker. Sprinkle with half of the reserved seasoning mixture. Top with remaining chicken and sprinkle with remaining seasoning mixture. Stir soup and flour together; spoon over top. DO NOT STIR.
- Cover and cook on high for 3 to 3-1/2 hours or on low for 6-8 hours or until chicken is tender and juices from chicken run clean when cut along the bone and vegetables are tender.
- Spread cooked noodles in a shallow 2 or 2-1/2 quart broiler-proof serving dish. Arrange chicken on noodles. Stir soup mixture and vegetables until combined. Spoon vegetables and some of the liquid over chicken. Sprinkle with pimento and Parmesan cheese.
- Broil 6 inches from heat source for 6-8 minutes or until lightly browned.
Garnish with parsley sprig if desired.

Tricks...
A leaf of
lettuce dropped into the pot absorbs the grease from the
top of soup. Remove the lettuce and throw it away
as soon as it has served its purpose.

Bread Pudding in
the Crock Pot
|
|
Ingredients:
6 cups of bread - cubed
3/4 cup raisins
1 cup of egg product (or eggs) - We use egg whites.
3/4-cup warm water
1 teaspoon of vanilla
1 tbsp. cinnamon
1 can (14 oz.) sweetened condensed milk (we use fat-free half & half and
skim milk.)

Directions:
Mix ingredients together and place in crock pot. Cook for about 4 or 5
hours. (Spray crockpot with cooking spray first for easier clean up.) |

Crock Pot Apple Butter

Apples; cut up, to fill 3 1/2 qt. crockpot
-
1 cup brown sugar
-
1 cup apple cider
-
1 lemon - squeeze juice
-
1 tablespoon cinnamon
Cut apples into chunks to fill 3 1/2 qt. crock pot. Add sugar, cider and lemon juice. Cover and cook on
low for 8 hours. Stir, add cinnamon and cook another 10 hours. Stir occasionally until brown. Run through
food mill or any strainer to strain out seeds and skins. To thicken,
return to slow cooker, and cook on high uncovered until desired consistency.

Crock
Pot Chicken Fricassee
(Reduced Fat)

1 can reduced fat cream of chicken soup
-
1/2 soup can water
-
1/2-cup chopped onions
-
1 teaspoon paprika
-
1 teaspoon lemon juice
-
1 teaspoon rosemary
-
1 teaspoon thyme
-
1 teaspoon salt
- 1/4-teaspoon pepper
-
4 skinless boneless chicken breasts
-
Non-stick cooking spray
Spray crock pot with non-stick cooking spray. Place chicken in
crock pot. Mix remaining ingredients together and pour over chicken. Cover and cook on low 6-8 hours. 1 hour before serving, prepare
chive dumplings:
- 3 tbs. shortening
-
1-1/2 cups flour
-
2 tsp. baking powder
-
3/4-tsp. salt
-
3 tbs. fresh, chopped chives, or 2 tbs. dried chives
-
3/4-cup skim milk
Mix dry ingredients and shortening. Add chives and milk, combine well. Drop by
teaspoonfuls onto hot chicken and gravy. Cover and cook on high for 45-60 minutes. Serve with mashed potatoes and vegetables, or over hot, cooked noodles.

BBQ Beef for Sandwiches

2-1/2 to 3 lbs. lean trimmed chuck roast or bottom round
-
1-1/2 cups ketchup
-
1/4-cup packed brown sugar
-
1/4-cup red wine vinegar
-
2 tbs. Dijon mustard
-
2 tbp. Worcestershire sauce
-
1 tsp. liquid smoke flavoring
-
1/2-tsp. salt
-
1/4-tsp. black pepper
-
1/2-tsp. garlic powder
Place roast in crock pot. Combine remaining ingredients; pour over roast. Cover and cook on LOW for 8 to 10 hours. Remove roast, shred meat. Place shredded meat back in
crock pot; stir to coat well. Spoon onto sandwich buns with extra sauce, if desired.
Serves 6 to 8.

Pot Rice Pudding Recipe

2- 1/2 cup cooked rice

1- 1/2 cup scalded milk

2/3-cup white or brown sugar
-
3 eggs, beaten
-
1 tsp. salt
-
2 tbsp. vanilla

1 tsp. cinnamon
-
1 tsp. nutmeg
-
1/2-cup raisins
-
3 tbsp. soft butter
Combine all ingredients. Pour into lightly greased Crock Pot. Cook on high 1 to 2 hours. Stir during first 30 minutes. Recipe can be doubled

Linda & Rich's Chili
This is a very mild chili. We don't measure
most of the time, so all ingredients are approximate measurements:
INGREDIENTS:
-
1 package of ground meat (turkey, beef, venison or whatever you have on
hand.)
-
2 large cans of crushed tomatoes
-
2 small cans kidney beans
-
1 small can tomato paste
-
2 large onions - grilled
-
1/2 green pepper - grilled
- Salt & pepper
- Minced garlic
- 1 cup water
- Package of Chili Mix
- Croutons
- Grated Cheese
Preparation:
Cut up onion and green pepper and grill until tender. Add salt,
pepper, and garlic to this mixture. In separate pan, brown ground
meat, pour off excess fat and rinse meat if necessary to remove the yucky
fat. Add package of chili mix and the water to the meat. Cook
on low for about 10-15 minutes while you prepare the sauce. In crock
pot, pour in the two cans of crushed tomatoes, the tomato paste, the 2
cans of kidney beans, and mix well. Add meat mixture, onions and
green pepper. Mix well again. Simmer in crock pot as long as
you possibly can, stirring
occasionally.
Note: Serve topped with grated cheese and croutons. Serve with
Italian bread. You can also use this as sauce over
noodles, spaghetti, or baked potato. And this is even better the
second day!
