Chocolate Chip Cookies

Ingredients:
1 cup (2 sticks) softened butter
1/2 cup granulated sugar
1- 1/2 cups packed brown sugar
2 eggs
2- 1/2 teaspoons vanilla extract
2- 1/2 cups all-purpose flour
3/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1- 1/2 twelve-ounce bags
semisweet chocolate chips

Directions:
1. Preheat oven to 350 degrees.
2. In a large mixing bowl, cream together the butter, sugars, eggs, and vanilla.
3. In another bowl, mix together the flour, salt, baking powder and baking soda.
4. Combine the wet and dry ingredients.
5. Stir in the chocolate chips.
6. With your fingers, place golf ball-sized dough portions 2 inches apart on an ungreased cookie sheet.
7. Bake for 9-10 minutes or just until edges are light brown. Makes 30 cookies. |
| Be careful not to cook these too long. It becomes tempting to keep cooking these because they don't seem to be done after 10 minutes, but they will continue to cook for awhile after you take them out of the
oven. When cool, will be nice and
chewy. |

BASIC DIET COOKIE BASE
|

Ingredients:
1 c. all-purpose flour
1/4 tsp. salt
1/2 tsp. baking soda
1/2 c. diet margarine
(at room
temperature)
1 egg
1/2 c. Sugar Twin
1/4 c. low-fat milk
1/4 c. water
1 tsp. vanilla extract
1/2 tsp. your favorite flavor
(butter, lemon, almond,
etc.)

Directions:
Combine and beat for 1 minute margarine, egg, milk,
water and extracts. Add Sugar Twin to flour, baking powder and
salt. Blend flour and sugar mixture into a large bowl with
other ingredients for about 2 minutes at low speed. Drop by
teaspoon onto ungreased cookie sheet. Bake 20 to 25 minutes or
until light golden brown. |
Variations:
When all ingredients have been blended together you may
wish to add:
Chocolate Chip: One or 2 ounces dietetic milk chocolate
candy, cut into chip-size pieces. Fold chips carefully into
mixture.
Spice Cookies: Add 1/4 cup raisins and 1/2 cup unsweetened applesauce.
Chocolate Chip: Melt 3 dietetic candy bars in double boiler. Blend melted
candy into cookie mixture.
Peanut Butter Cookie: Add 1 cup crunchy peanut butter to
dough, adding a small amount of peanut butter at a time. |

I was in the kitchen one day, trying to reach the baking powder on the top shelf of a cabinet. Being only five feet tall, I had to stretch, but still couldn't grab the box.
Fortunately, I have two six-foot-tall sons whom I often call to come to my rescue.
"Hey, Brian!" I yelled to my second son, who was in the living room. "Will you get your tallness in here and get this for me?"
"Sure, Mom," he remarked as he bounded into the kitchen. "But next time, I'd prefer the title 'Your Highness.'"

Ingredients:
2 cups butter
4 cups flour
2 tsp. soda
2 cups sugar
5 cups oatmeal
24 oz. chocolate chips
2 cups brown sugar
1 tsp. salt
(1) 8 oz. Hershey Bar (grated)
4 eggs
2 tsp. baking powder
2 tsp. Vanilla
3 cups chopped nuts (your choice).

Directions:
Measure oatmeal and blend in a blender to a fine powder. Cream the
butter and both sugars. Add eggs and Vanilla; mix together with flour, oatmeal, salt,
baking powder, and soda. Add chocolate chips, Hershey Bar and nuts. Roll into balls and
place two inches apart on a cookie sheet. Bake for 10 minutes at 375 degrees. Makes 112
cookies.
(Recipe may be halved) |

When you
are creaming butter and sugar together, rinse the bowl
with boiling water first. They will cream much
faster.

Ingredients:
- 12 oz. vanilla wafers, crushed
- 1 stick butter, melted
- (1) 1 oz. pkg. confectioners sugar
- 1 small can orange juice (diluted)
- Add 1/3-cup flour to thicken
- 14 oz. package coconut
|
Directions:
Mix all ingredients (except coconut) well.
Roll into balls. Roll in coconut. Let harden in
refrigerator. Store in a covered container.
Makes 45 to 50 balls.

Ingredients:
- 1 cup of Smart Balance or 2 sticks of butter or margarine
- 1-1/2 cups of sugar
- 2 eggs
- 2-3/4 cup of all-purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
Preheat oven to 375 degrees.
- In small bowl mix 4 tablespoons of sugar and 2 teaspoons of cinnamon.

Directions:
Using electric mixer, beat butter, sugar and eggs together. Add
other ingredients and mix well. Refrigerate for 30 minutes. Form dough into balls (about the size of walnuts) and then roll balls in cinnamon and sugar mixture. Place about 2" apart on ungreased cookie sheet. Bake about 10-12 minutes until golden brown for crispy cookie, or about 9 minutes for a softer cookie.

- 1/3-cup shortening
- 3/4-cup sugar
- 1 teaspoon baking powder
- 1 egg
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- granulated sugar

Directions:
Using electric mixer, beat butter and shortening together. Add sugar and baking powder. Beat in egg and vanilla. Add flour. Refrigerate for at least 1 hour. Roll and cut with cookie cutters or roll into 1" balls and roll in granulated sugar and flatten. Bake in 350 oven on ungreased cookie sheets 7 to 10 minutes until bottoms are lightly browned. Makes about 36 cookies.

Ingredients:
- 1 cup confectioners' sugar
- 2 teaspoons milk
- 2 teaspoons light corn syrup
- 1/4-teaspoon almond extract
- 3 drops food coloring
|
Directions:
Stir together the confectioners' sugar and milk until smooth. Add the corn syrup and almond extract; mix well.
To make thinner icing, add more corn syrup. Add food coloring of
your choice. Dip cookies in icing or paint with brush.
