Honey-Baked Chicken With Sesame Seeds

Ingredients:
2 tbs. sesame seeds
3 tbs. honey
1/4-C Dijon mustard
1/4-C Dry sherry or dry white wine
1 tbs. lemon juice
3 boneless chicken breasts (about I lb. each)
Nutrition information:
Per serving: 185 calories, 26 grams protein, 12 grams carbohydrates, 4 grams total fat, 63 milligrams cholesterol, 369 milligrams sodium.
Notes: Sesame seeds add crunch. Add carrots and rice to share the flavorful sauce.

Directions:
Toast sesame seeds in a small frying pan over medium heat, shaking pan frequently, until golden (about 5 minutes). Transfer sesame seeds to a small bowl and blend with honey, mustard, sherry and lemon juice.
Arrange chicken breasts, slightly apart, in a 9 x 13 baking dish or pan. Pour sesame seed mixture evenly over chicken. Bake, uncovered, in a 400 degree oven, basting several times with sesame seed mixture, until meat in thickest part is no longer pink when slashed (5 to 20 minutes). Take chicken out and transfer to a platter or plates. Pour sauce into a small bowl to pass at the table.
Yield: Makes 6 servings.

Chicken & Rice Dinner

Ingredients:
1 tbs. oil
4 small boneless skinless chicken breasts (approx. 1 lb.)
2 cups water
1 cup salsa
2 cups Minute Rice, uncooked
1 can (8 oz.) whole kernel corn, drained
1 cup shredded cheddar cheese
|
Directions:
Heat oil in large skillet on medium-high heat. Add chicken; cover. Cook 4 minutes on each side or until cooked through. Remove chicken from skillet. Stir in water and salsa. Bring to boil. Stir in rice and corn. Top with chicken. Sprinkle chicken with cheese; cover. Cook on low heat 5 minutes. Stir.
Yield: Makes 4 servings.
Ready in 15 minutes! |

Chicken Veronique

Ingredients:
1 tbs. vegetable oil
3 bone-in whole chicken breasts (10 to 12 oz. each),
split in half, skin removed
1/2-cup orange juice
1/2-cup dry white wine
1 tsp. sugar
1/4-tsp. salt
1/4-tsp. dried marjoram leaves
1/8-tsp. white pepper
1 tsp. cornstarch mixed with 1 tbs. water
1/2-cup halved seedless green grapes
1/2-cup halved seedless red grapes
1 tsp. grated orange peel

Directions:
Place oil in 12-inch nonstick skillet. Heat over medium-high heat. Add chicken. Cook for 4 to 6 minutes, or just until
browned on both sides. Drain excess oil from skillet. Add juice, wine, sugar, salt, marjoram and pepper to skillet.
Cover. Reduce heat to low. Let simmer for 12 to 15 minutes, or until meat near bone is no longer pink and juices run
clear. Remove chicken from skillet and place on serving platter. Cover to keep warm. Set aside. Using whisk, stir
cornstarch mixture into skillet. Add grapes and peel. Cook
for 1- 1/2 to 2- 1/2 minutes, or until sauce is thickened and translucent, stirring constantly. Spoon over chicken.
Yield: 6 servings. |

Chicken Salad

Ingredients:
2 cups (11 ounces) cooked chicken
chop into 1/2 inch chunks
1 1/2 cups seedless red or green grapes
rinsed and cut in half
1/2 cup diced celery
1 cup of pecans, coarsely chopped
2 tablespoons basil
1/2 cup of green onions, thinly chopped
1 cup of mayonnaise
1/4 teaspoon of salt
1/4 teaspoon black pepper
1 tablespoon lemon juice

Directions:
Combine all ingredients and mix well
Can be used for sandwiches, or eaten as a salad.
This is one of our favorite recipes!

Walnut
& Herb Crusted Chicken

Ingredients:
3/4 cup finely diced walnuts
1/4 cup bread crumbs
2 tbsp. flour
1-1/2 tsp. dry basil leaves
3/4-tsp. dry rosemary leaves
1/2-tsp. salt
1 egg
2-1/2 lbs. boneless, skinless chicken (cut up)

Directions:
Combine walnuts, bread crumbs, flour, basil, rosemary and salt in shallow
dish. Lightly beat egg in another dish. Dip chicken pieces in
egg then roll in walnut mixture. Bake 40 to 45 minutes at 350 degrees.

Zesty
Chicken Breasts (for the Grill)

Ingredients:
4 boneless, skinless chicken breasts
1/3 cup white wine vinegar
1/3 cup water
1 tbs. butter or margarine
1 tbs. Worcestershire Sauce
1 tbs. garlic salt
1/2-tsp. coarsely ground pepper
|
Directions:
Preheat grill to medium (if using gas grill), or until charcoal is covered
with gray ash and is medium hot.
In a small saucepan, combine vinegar, water, butter,
Worcestershire Sauce, garlic salt and pepper. Bring to a boil.
Place chicken on heated grill. Brush with half of the
sauce. Grill for 8 minutes.
Turn chicken over and baste with other half of the
sauce. Grill another 7 or 8 minutes. |

Sometimes it DOES take a Rocket Scientist
Scientists at NASA built a gun specifically to launch dead chickens at the
windshields of airliners, military jets and the space shuttle, all traveling at maximum velocity. The idea is to simulate the frequent incidents of collisions
with airborne fowl to test the strength of the windshields.
British engineers heard about the gun and were eager to test it on the
windshields of their new high speed trains.
Arrangements were made, and a gun was sent to the British engineers. When the
gun was fired, the engineers stood shocked as the chicken hurtled out of the barrel, crashed into the shatterproof shield, smashed it to smithereens, blasted
through the control console, snapped the engineer's backrest in two and embedded
itself in the back wall of the cabin, like an arrow shot from a bow.
The horrified Brits sent NASA the disastrous results of the experiment, along
with the designs of the windshield, and begged the US scientists for suggestions.
NASA responded with a one-line memo:
"Thaw the chicken."
