No-Fat Old-Fashioned Apple Cake

 

NO-FAT OLD FASHIONED APPLE CAKE

Ingredients:

  • 2-1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 2-1/4 teaspoons cinnamon
  • 1/4 teaspoons ground nutmeg
  • 1/8 teaspoon mace
  • 1 egg
  • 2 egg whites
  • 1 teaspoon vanilla
  • 1/2 cup applesauce
  • 1/2 cup buttermilk
  • 1-1/2 cups tart apples; diced
  • 1/2 cups raisins
  • brown sugar

Directions:

Sift together flour, sugar, baking soda and spices. In mixer bowl put egg, egg whites, vanilla, apple sauce and milk. Mix with electric mixer. Gradually add dry ingredients, blending well. Stir in apples and raisins by hand. Pour batter into 8x8 pan that has been sprayed with Pam. Sprinkle with brown sugar. Bake in preheated 350 degree oven for about 50 minutes. Yield: 9 Servings.

Diaper Cakes
Great for Baby Showers!

Materials:
One baby bottle
6 cloth diapers (or you can use disposables)
Rubber bands
Various baby items
(i.e., samples of shampoo, lotion, etc., rattles, teethers, etc.)
Receiving blanket
Diaper pins

Instructions:

Variation #1

Take the one diaper and fold in thirds length wise (or to height you want), wrap around the bottom of the baby bottle (you can fill with M&M's, Q-Tips or whatever you wish), secure with rubber band.  Take another diaper and do same (wrap around first diaper).  Do this with the rest of the diapers.  Then take receiving blanket and fold to match height of diapers.  Wrap around the outside of diapers and secure with diaper pins.  Stuff the various items in the top of the cake "folds" (so they stick out).  You can pin some lace around the cake and add some curling ribbon.

Variation #2

For either cake, make a base from heavy cardboard 1-inch wider than cake.  I found it easier to buy a real plate from a dollar store.

Materials:
1 dz. padded cloth diapers
1 toilet paper tube
(29) 1/2 x 10" piece poly. fabric
6 pr. infants/child's pastel crew socks
1 pr. child's knee socks
Plastic or icing cake letters (BABY),
2 yds. knitting worsted (I didn't use),
(3) 3/8" pompoms
1 pr. plastic pants
Small toys to tack to cake (rattle, pacifier, etc.)
Diaper pins
Small plastic or silk flowers
Finished cake was approx. 6" high and 10" around

  1. Fold diapers into thirds lengthwise and roll around the tube.  You can slightly overlap them or butt them against one another and tape.

  2. Wrap fabric snuggly around to mark for seams.  Stitch or use fabric glue.  Slide over diapers gathering to look like frosting.  Tuck top and bottom edges inside.  Tuck plastic pants and diaper pins in the tube.  (I didn't use this. I left the cake white.)

  3. For edging, stretch knee socks as far as possible.  Roll into a thin tube pinning to scrap cardboard.  Tie tightly with yarn at 1" intervals.  Remove from cardboard and place around bottom of cake.  Pin in place. (There will be a gap)

  4. For sock leaves (I used silk) tie off 1" of heal and toe of 2 socks with yarn. Pull ends into points.  Stuff excess sock into center tube in cake. Pin points of leaves to center of cake.

  5. Sock roses...make 7...Fold sock in half lengthwise.  Grasp between thumb and forefinger and roll tightly forming a bud.  Pull edges down as you roll. Hand tack through all layers.  Pin as desired to cake. (I made more than they suggest.

  6. Flat sock flowers...make 3... fold sock in 1/2 lengthwise.  Baste along fold.  Gather tightly into flower and knot.  Glue pompom into center. Pin to cake.  Pin other silk flowers to cake.  Glue letters to fabric and pin to top of cake (I used toy blocks with "boy" "girl" "baby" or the child's name...if I knew it).

Variation 3

Materials:
Four 21" x 40" cloth diapers, 
(12) 4-1/2" x 15" x 3/3" diaper liners
Two pair baby socks with lace edging
Four diaper pins
One baby bottle
10" round cake tray with cover
Two yards ribbon, 3/8"wide
27' of eyelet lace, 3/4" wide.

Instructions:  Fold diaper lengthwise in half.  Place 3 diaper liners inside folded cloth diaper 5-1/2" below the top of edge.  Fold the diaper lengthwise again to measure 5" x 40".  Make four sets total.  Place the bottle at the end of one diaper and roll the diaper around bottle. Continue to do so with the other three sets of diapers around the bottle.  Pin the end of the diaper with a pin.  Tie a 7" piece of ribbon 1" below the top of each of the 4 socks and tuck the socks into the top of the cake.  Tie 4 bows with 8" lengths of ribbon and pin them around the sides of the cake. Pin the other 3 diaper pins vertically around the sides of the cake.  Alternate pins and bows.  Put the cake on bottom of carrier and wrap 27"of eyelet lace around bottom edge of the cake.  Tuck ends into the pinned end of a diaper.  Cut a 2-3/4" hole out of the top center of cake cover for the bottle to fit through.  Place cover on cake.

Kitty Litter Cake
A real recipe! Guaranteed to make your next party remembered!

Ingredients & Supplies:

  • 1 spice or German chocolate cake mix (and ingredients listed on mix)
  • 1 white cake mix (and ingredients listed on mix)
  • 1 pkg. white sandwich cookies
  • 1 large pkg. vanilla instant pudding mix (and ingredients listed on mix)
  • green food coloring
  • 12 small Tootsie Rolls
  • 1 new kitty litter box (please! Not a used one!)
  • 1 new kitty litter box liner
  • 1 new pooper scooper

Directions:

  1. Prepare cake mixes and bake according to directions (any size pans).
  2. Prepare pudding mix according to package directions and chill until ready to assemble. Crumble white sandwich cookies in small batches in blender, they tend to stick, so scrape often.  Set aside all but about 1/4-cup.  To the 1/4-cup of cookie crumbs, add a few drops green food coloring and mix using a fork or shake in jar.
  3. When cakes are cooled to room temperature, crumble into a large bowl.  Toss with half the remaining white cookie crumbs and the chilled pudding.  You probably won't need all of the pudding.  Mix it with the cake and feel it; you don't want it soggy, just moist.  Gently combine.
  4. Line new, clean kitty litter box.  Put mixture into litter box.
  5. Put three unwrapped Tootsie Rolls in a microwave safe dish and heat until soft and pliable.  Shape ends so they are no longer blunt, curving slightly.  Repeat with 3 more Tootsie Rolls and bury in mixture.
  6. Sprinkle the other half of cookie crumbs over top. Scatter green cookie crumbs lightly over the top, this is supposed to look like the chlorophyll in kitty litter.
  7. Heat remaining Tootsie Rolls, 3 at a time in the microwave until almost melted.  Scrape them on top of the cake and sprinkle with cookie crumbs.  Or, only spread 5 of the remaining Tootsie Rolls over the top. Take one and heat until pliable, hang it over the side of the kitty litter box, sprinkling it lightly with cookie crumbs.
  8. Place the box on a newspaper and sprinkle a few of the cookie crumbs around.  Serve with a new pooper scooper.

Gingerbread Cake Recipe - No Fat Recipe

 

NO-FAT Gingerbread Cake

Ingredients:

1 cup Smart Balance Buttery Spread
1 cup brown sugar
1/2-cup molasses
2 eggs (or 4 egg whites)
1 cup applesauce
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground ginger
1 teaspoon ground cinnamon

Directions:

  • Preheat oven to 350 F.
  • Grease and flour a 9 x 13 baking dish.
  • Melt the Smart Balance buttery spread and pour into mixing bowl.
  • Beat in the sugar, molasses, eggs and applesauce.
  • Add the flour, baking soda, ginger, and cinnamon.  Mix well.
  • Spoon into the baking dish and bake for 35 minutes.
  • Serve with whipped cream or vanilla ice cream or with Gingerbread Sauce (also known as "Snot Sauce."  (Recipe below...)
 

Gingerbread Sauce
(also known as "Snot Sauce")
Name and recipe from Rich's Grandmother - Mae Collier

Heat 2 cups of water
Add 1-1/2 tablespoons of cornstarch
Add 1/2-cup sugar
Cook until clear - stirring until mixture comes to a boil.
Remove from stove and add
1 tablespoon butter (we use Smart Balance)
1 teaspoon vanilla
Pour over gingerbread...YUMMY!

Pumpkin Cake Recipe

 

PUMPKIN CAKE

Ingredients:

  • 2 cups flour
  • 2 cups sugar
  • 1 tsp. salt
  • 2 tsp. baking soda
  • 3 tsp. cinnamon
  • 1-1/2 cups oil
  • 1 small can pumpkin
  • 4 eggs, beaten

Icing Ingredients:

  • 1 cube soft butter or margarine
  • 3 oz. cream cheese, softened
  • 1/2 box powdered sugar
  • 1-1/2 cups finely chopped pecans
  • 1 tsp. vanilla

Directions:

Mix all together. Bake in well greased and floured Bundt or tube pan. Bake 1 hour in a 350 degree oven.

Beat butter and cream cheese till well mixed; then blend in vanilla and powdered sugar, a little at a time until fluffy. Fold in nuts.  Ice cake after it has completely cooled. Keep refrigerated.

Pumpkin Patch Cupcakes

Ingredients:

  • 24 Halloween chocolate sandwich cookies

  • 1 (18.25-ounce) package yellow cake mix, prepare batter according to directions

  • 1 (16-ounce) can prepared  vanilla frosting

  • Flaked coconut tinted green with food coloring if desired

  • Black decorator frosting or gel

Makes 24 Cupcakes.

Directions:
Split cookies, leaving filling on one side of each cookie. Coarsely chop plain split cookies; set aside.  Fold chopped cookie pieces into prepared cake batter; spoon into 24 paper-lined 2 1/2-inch muffin pan cups.  Bake according to package directions or until until the toothpick inserted in the center comes out clean.  Remove from pans; cool completely on wire racks. Frost cupcakes with prepared frosting. Immediately sprinkle with green tinted coconut. (Frost and sprinkle a few at a time so frosting does not harden before adding coconut.) Decorate orange filling on split cookies with black decorator frosting or gel to resemble pumpkin faces. Allow to dry. Stand one pumpkin face on edge into frosting on each cupcake.

Red, White & Blue Easy Dessert Recipe

Ingredients:

  • 1 Angel Food cake mix
  • 2 pkgs. vanilla custard or pudding mix
  • 2 lbs. of fresh fruit -- strawberries - sliced (or you can use raspberries) - or better yet, mix them - ½ strawberries & ½ raspberries - plus some blueberries (Save a little fruit for decorating the top.)
  • 1/3 cup sugar
  • 1-1/2 cup whipped cream or Cool Whip
  • 1/3 cup water or fruit juice (for an added treat, substitute the water with sherry or other liquor)

Directions:
Prepare cake and pudding according to package directions and let cool completely. Mix fruit with water, juice or liquor. (Fruit should be sitting in liquid but not too much - don't drown the fruit.) Don't forget to set aside a little bit of the fruit to garnish the top.  Cut the cake into large chunks and cover the bottom of dish with a layer of cake chunks. Spoon a layer of the fruit mixture, then a layer of custard or pudding. Repeat the layers several times according to your dish size. Top with whipped cream and remaining fresh fruit. Chill before serving.

Tips & Tricks...

  • When a cake recipe calls for flouring the baking pan, use a bit of the dry cake mix instead.  No white mess on the outside of the cake.
  • When you buy cupcakes wrapped in cellophane or paper (like Tasty-Cakes) and you notice the icing is sticking to the paper, hold the package under the faucet with cold water running for a moment before you unwrap it.  The paper will come off clean, leaving your icing on the cupcake.
