A-Z Bread

Ingredients:
3 cups flour
1 tablespoon ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon baking powder
3 eggs
2 cups sugar, brown, granulated or
-- a combination
2/3 cup vegetable oil
2 cups cooked, uncooked or drained canned fruits or vegetables*
1 tablespoon vanilla
1 cup chopped nuts
1 cup raisins, or dates, chopped -- optional

Directions:
Preheat oven to 325F. Lightly grease and flour 2 (8 1/2" x 4 1/2") loaf pans. In a medium bowl, stir together flour, cinnamon, baking soda, salt, and baking powder; set aside. In a large bowl, beat eggs; stir in sugar and oil. Stir in fruits or vegetables and vanilla. Stir in flour mixture and nuts; stir in raisins or dates, if desired. Pour batter into prepared pans.  Bake 50-60 minutes or until a wooden pick inserted in the center comes out clean. Cool in pans on a rack 5 minutes. Remove from pans, cool completely on rack. If preparing ahead, wrap cooled loaves airtight. Refrigerate up to 4 days or freeze up to 2 months.

Suggested fruits and vegetables:
Chopped or grated uncooked apples; applesauce; chopped uncooked or mashed cooked apricots; mashed avocados; mashed bananas; mashed or pureed strawberries, blackberries, raspberries, or blueberries; shredded fresh or mashed cooked carrots; pitted, chopped sweet cherries; ground fresh or frozen cranberries; finely chopped or pureed nectarines; ground oranges; finely chopped or pureed uncooked fresh or canned peaches; pureed uncooked fresh or canned pears; crushed pineapple; canned or mashed cooked pumpkin; mashed cooked rhubarb; grated uncooked fresh or mashed cooked zucchini.

Fat Free Banana Nut Bread

Ingredients:
3 ripe bananas
3/4-cup sugar
2 eggs
2 cups of flour
1 tsp. salt (optional)
1 tsp. baking soda
1/2-cup chopped walnuts (optional)
1/2-cup raisin (optional)

Directions:
Peel bananas and break into pieces, place in mixing bowl.  Add sugar, eggs, salt, baking soda.  Mix well with electric mixer.  Add flour and mix well.  Add walnuts and raisins (optional.)

Bake at 325 degrees for one hour in greased loaf pan.

Easy Apple Delights

Ingredients:

1 pkg. Pillsbury Dinner Rolls 
Applesauce
Pinch of cinnamon

Directions:
Press out each roll into square shape.
Add 1 tablespoon applesauce.
Fold to turnover shape.
Bake at 400 degrees for 3 or 4 minutes.

Wine & Cheese Bread

Ingredients:
1 cup plus 2 tbs. all-purpose flour
1/2 tsp. baking powder
1/4 tsp. cream of tartar
1/2 tsp. salt
1/8 tsp. baking soda
1/4 cup instant nonfat dry milk
1/3 cup vegetable shortening
1 tbs. sugar
1 tbs. minced onion
1 egg, beaten
1/4 cup milk
1/4 cup white wine
1/2 tsp. dried oregano
1/4 cup freshly grated Parmesan cheese

Directions:
Sift together flour, baking powder, cream of tartar, salt, soda and dry milk. Cut in shortening until the mixture resembles coarse meal. Add sugar, minced onion, egg, milk, wine and oregano. Mix thoroughly. Spread mixture in greased 8 or 9-inch round pan and sprinkle with cheese. Bake at 425 degrees for 15-20 minutes or until a wooden pick inserted in center comes out clean.

Foccacia Bread

Ingredients:
3-1/2 cups all-purpose flour
1 tsp. sugar
1 tsp. salt
1 tbs. active dry yeast
1 cup water
2 tbs. vegetable oil
1 egg
3 tbs. olive oil
1 tsp. crushed rosemary

Directions:
Combine 1 cup flour, sugar, salt, and yeast. Mix well. Heat water and vegetable oil until warm, and add to yeast mixture along with the egg. Blend with an electric mixer at low speed until moistened. Beat for 2 additional minutes. Stir in 1-3/4 cup flour while beating, until dough pulls away from side of bowl. Knead in ¾-cup flour on floured surface. Cover dough with a bowl, and let sit for 5 minutes. Place dough on a greased baking sheet. Roll out to 12-inch circle. Cover with greased plastic wrap and a cloth towel. Place in a warm place for 30 minutes. Uncover dough, and poke holes in it with a spoon handle at 1-inch intervals. Drizzle olive oil on dough, and sprinkle with crushed rosemary. Bake at 400 degrees for 17 to 27 minutes, until just golden. Remove from baking sheet, and cool on rack. Yield: 1 loaf

Fat Free Zucchini Bread

Ingredients:
2-1/2 cups grated zucchini (peeled)
1-3/4 cups sugar (add a little more sugar for a sweeter bread)
2 eggs
1/2-cup applesauce
2 tsp. vanilla extract
3 tsp. cinnamon
1/4 tsp. baking powder
1 tsp. baking soda
3 cups flour
1 cup raisins (optional)

Directions:
Place everything but the flour and raisins in a bowl and mix well with electric mixer.  Add flour - mix well then add raisins (if desired.)

We do not remove seeds from the zucchini.  They bake well into the bread and you don't even notice them.

Bake at 350 degrees for one hour in greased loaf pan.

Mexican Corn Bread

Ingredients:
1 cup cornmeal
1 cup milk
2 eggs
1/2-tsp. baking soda
1/2-cup oil
1 can drained, whole kernel corn
1 onion diced
1/2-pound of grated cheese
2 whole jalopeno's, diced
1 lb. of hamburger meat or hot sausage (optional)

Directions:

Mix all ingredients above and bake at 375 degrees for 1 hour or until golden brown.

Milk Toast

Ingredients:
2 Slices Buttered Toast
Approx. 1/2-cup skim milk
Sugar
Cinnamon
Raisins

Directions:  Place bread in toaster.  While it's toasting, place milk and raisins in a cup or bowl and warm in the microwave for approx. 1-1/2 minutes.  By this time the toast should have popped up - lightly butter then sprinkle sugar and cinnamon on the toast.  Cut or break into bite-size pieces and place in bowl.  The microwave should have beeped by now -- pour the warm milk and raisins over the toast.  Voila!  Milk toast.  May not sound too appealing, but it tastes great!

Bread Pudding in the Crock Pot

Ingredients:

6 cups of bread - cubed
3/4 cup raisins
1 cup of egg product (or eggs) - We use egg whites.
3/4-cup warm water
1 teaspoon of vanilla
1 tbsp. cinnamon
1 can (14 oz.) sweetened condensed milk (we use fat-free half & half and skim milk.)

Directions:
Mix ingredients together and place in crock pot. Cook for about 4 or 5 hours. (Spray crockpot with cooking spray first for easier clean up.)

Tips & Tricks...

To keep your muffin or cake mix from turning too blue when adding blueberries, coat the blueberries with flour or cornstarch before mixing them into your batter.

Pizza Dough - Bread Machine Recipe

Ingredients:

  • 3 cups bread flour

  • 1 cup water

  • 4 teaspoons olive oil

  • 1 teaspoon bread machine yeast

  • 3/4 teaspoon salt

Directions:  Place the ingredients in the pan of the bread machine and make the proper selection on your bread machine to mix the ingredients.

White Bread - Bread Machine Recipe

Ingredients:

  • 1 cup + 2 tablespoons water

  • 1 tablespoon softened butter or margarine (We use Smart Balance)

  • 2 tablespoons sugar

  • 1 tablespoon non-fat dry milk powder

  • 1-1/2 teaspoons salt (We use salt substitute.)

  • 3 cups of bread flour

  • 2-1/2 teaspoons bread machine yeast

Directions:  Place the ingredients in the pan of the bread machine in the following order:  water, butter, sugar, milk powder, salt, flour.  Make an indentation in the flour and place yeast so it doesn't come in contact with the liquid ingredients.  Plug in the machine and press the desired selection.  When the bread is done, remove the pan from the machine and allow the pan to cool.  Loosen bread from sides of pan and place bread on cooling rack.  Allow bread to cool for about 20 minutes before slicing.

Bread - Fresh or Not?

    I thought this was interesting.  I looked in the grocery store and the bread wrappers do have different colored twist ties, and even the ones with the plastic clips have different colors.  You learn something new everyday!!
    When you go to buy bread in the grocery store, have you ever wondered which is the freshest, so you squeeze for freshness or softness.
    Did you know that bread is delivered fresh to the stores five days a week?   Monday, Tuesday, Thursday, Friday and Saturday. And each day has a different color twist tie.
They are:
    Monday - Blue
    Tuesday - Green
    Thursday - Red
    Friday - White
    Saturday - Yellow
    So today being Thursday, I wanted a red twist tie, not white which is Friday (almost a week old?)
    The colors go alphabetically by color blue, green, red, white, yellow -- Monday thru Saturday. Very easy to remember.  But I put a post-it note in my wallet when I first found out about this so I would not forget.
    Enjoy fresh bread when you buy bread with the right color on the day you are shopping.
