Recipe for Blue Cheese Spread

Ingredients:

  • 8 oz. package cream cheese, softened
  • 8 oz. blue cheese, crumbled
  • 2 Tbsp. Madeira wine
  • 2 Tbsp. shallots, finely chopped
  • Salt and fresh ground pepper to taste

Directions:
Combine all ingredients together and mix well. Serve with crackers, bread or fresh fruit.  Serves 6 to 8.

Blue Cheese adds a special flavor and color to this appetizer. The strong flavor of the cheese is complimented by the cream cheese, wine and shallots. This appetizer is full of flavor and works well with fruit or crackers.

Recipe for Chicken With Dip
Recipe from our sister-in-law, Kathy,
from their Christmas Party.  YUMMY!

Chicken

Cut chicken breasts in strips.  Dip chicken in milk.
Shake the chicken in mixture of the ingredients below
and then fry in oil:

  • 1 cup flour
  • 1 tsp. black pepper
  • 1 tsp. cayenne pepper
  • 1/2-tsp. garlic powder
  • 2 tsp. salt

Dip

  • 1 tsp. cayenne pepper
  • 1 cup mayonnaise
  • 1 tsp. lemon juice
  • Salt to taste
  • Dash of Tabasco

Tips & Tricks...

A broth that is too salty can be improved with the addition of sugar and vinegar.  Try one teaspoon of sugar and, if necessary, add one-half to one teaspoon of vinegar.

Recipe for Cowboy Caviar

Here's something fun for the bridge club, dad's poker night or just to serve the family while you all watch a movie together.

Ingredients:

  • 15 oz. black beans, rinsed and drained
  • 4 oz. ripe olives, drained and chopped
  • 1/4-cup finely chopped onion
  • 1 clove garlic
  • 2 Tbs. vegetable oil
  • 2 Tbs. lime juice
  • 1/4 tsp. salt
  • 1/4 tsp. red pepper, crushed
  • 1/4 tsp. cumin
  • 1/8 tsp. pepper
  • 8 oz. cream cheese, softened
  • 2 eggs, hard-boiled and chopped
  • 1 bunch green onion with top, sliced

Directions:
Mix all ingredients except cream cheese, eggs and green onion. Cover and refrigerate 2 hours or more. Spread cream cheese on a serving plate. Spoon bean mixture evenly over cream cheese. 
Arrange eggs on bean mixture in ring around edge of plate. Sprinkle with the green onions. Serve with crackers.

Recipe for Deviled Eggs

Ingredients:

  • Hardboiled Eggs (We usually do 12 to 18 - depends on size of group you are feeding or the size of your Deviled Egg dish.)
  • Mustard (Most people use yellow mustard, but we've tried some flavored mustards, too - pretty good!)
  • Mayonnaise (We usually use Miracle Whip)
  • Salt & Pepper (if desired)
  • Paprika (if desired)

Directions:
Peel the hardboiled eggs and slice in half length-wise. Remove the yolks and place in bowl. Break up the yolks with a fork. Add mustard and mayonnaise to taste. Mix well. Add salt and pepper if you like. Fill sliced egg whites with mixture. Sprinkle a little paprika on top for color. Refrigerate.

Recipe for Glazed Meatballs

Ingredients:

  • 1 lb. ground beef
  • 1/2-cup fine dry bread crumbs
  • 1/3-cup minced onion
  • 1/4-cup milk
  • 1 egg, beaten
  • 1 tablespoon chopped parsley
  • 1 teaspoon salt
  • 1/2 teaspoon Worcestershire sauce
  • 1/8-teaspoon pepper
  • 2 tablespoons vegetable oil
  • 1/2-cup bottled chili sauce
  • 1/2-cup grape jelly

Directions:
     Combine ground beef, breadcrumbs, onion, milk egg, parsley, salt, Worcestershire sauce and pepper.  Mix well.  Shape into 1-inch meatballs.  Cook in hot oil over medium heat for 10 to 15 minutes or until browned.  Drain on paper towel.
     Combine chili sauce and jelly in medium saucepan; stir well.  Add meatballs.  Simmer 30 minutes, stirring occasionally.

Note:  For a less spicy sauce, omit chili sauce and use ketchup instead.  For a little different taste, use mustard in place of ketchup.  For a party, place meatballs and sauce in a crockpot to keep warm.

Recipe for Guacamole

Ingredients:

  • 1 ripe avocado
  • 4 oz. sour cream
  • lemon juice

Directions:
    Chop and mix a ripe avocado.  Add about 5 drops of lemon juice to keep the avocado mixture from turning brown.  Add sour cream and spices.

Guacamole can be used as a dip, salad dressing, or topping for hamburgers and nachos.
TIP:  Add chopped onion and diced tomato for a guacamole dip that is OUT OF THIS WORLD!!!!! Don't forget a lot of salt too!

Recipe for Honey, Dijon Mustard & Yogurt Dip

Ingredients:

  • 2/3 cup plain yogurt
  • 1/4 cup honey
  • 2 tsp. Dijon mustard

Directions:
Combine all ingredients in a bowl and serve with your favorite veggie!

Recipe for Horseradish Sauce

Ingredients:

  • 1 jar (6 oz. prepared white horseradish
  • 1 cup heavy cream
  • 1/2-cup sour cream
  • 1 teaspoon granulated sugar
  • 1/4 teaspoon salt

Directions:
Drain horseradish in mesh strainer and press horseradish with the back of a spoon to squeeze it dry. Discard liquid. In a small bowl, (use electric mixer) beat heavy cream and sour cream until soft peaks form. Fold in horseradish, sugar, and 1/4 teaspoon salt.

Ingredients:

  • 2 cups sour cream
  • 6 tbsp. mayonnaise
  • 1/2 teaspoon salt
  • 1/4 teaspoon paprika
  • 4 tbsp. grated horseradish
  • Dash of parsley (if desired)

Directions:
Combine all ingredients and chill.

Note:  You can buy horseradish at a farmer's market.  It looks like a turnip.

Recipe for Hot Chicken Dip
Recipe from our sister-in-law, Kathy, from their Christmas Party.
YUMMY!

  • 3 Chicken breasts (boiled for 15 minutes) cool and shred
  • (2) 8 oz. packages of softened cream cheese
  • 1-1/2 cup shredded cheese
  • 6 oz. Red Hot sauce
  • 8 oz. Ranch dressing
  • 2 tablespoons minced garlic

Mix together, bake at 350 degrees for 25 minutes.
Serve with tortilla chips.

Recipe Hot Dog Sauce from The Hot Dog Shop

Ingredients:

  • 3 lbs. ground meat
  • 1-1/2 cup diced onion
  • 1/8 tsp. salt
  • 1 tbsp. chili powder
  • 1-1/2 tbsp. paprika
  • 1/2-tbsp. ground cloves
  • 1 tbsp. nutmeg
  • 1 tbsp. black pepper
  • 1-1/2 tbsp. sugar
  • 14 oz. ketchup
  • 6  cups water
  • 1 cup flour mixed with 1 cup water (mix - not so lumpy)

Directions:
Brown and chop the ground meat in a 4 qt. pan.  Drain off excess grease.  Add each of the spices, one at a time, and stir after each one.  After all the spices are in the mixture, it should be a pastry consistency.  Add the ketchup; stir in the water.  Bring to a boil, stirring constantly.  Keep the heat low and simmer for 2 hours.  Add the flour and water mixture.  This mixture will blend easily if you mix in your blender before adding to the rest of the sauce.  The excess sauce may be frozen.

Yield: 1 Gallon
This sauce is from the famous Hot Dog Shop in Butler, PA
(which is now closed...darn!)

Recipe for Hot Dog Sauce - Kelly's

Ingredients:

2 lb. hamburger
1 tbsp. salt
1 tbsp. cloves
1 tbsp. black pepper
1 tbsp. sugar
3 cups water
1 cup diced onions
3/4-tbsp. chili powder
1 tbsp. nutmeg
2 tbsp. paprika
7 oz. ketchup
1/2-cup of flour with 1/2-cup water - add the last 1/2-hour.

Directions: Mix all together in slower cooker. Simmer slowly for two hours.

Ingredients:

  • Sour cream - 8 parts
  • Mustard - 1 part

Directions:
Choose your favorite mustard (Dijon mustard works well)
and mix with sour cream.

Recipe for New England Clam Chowder - Micki's Style

Ingredients:

  • 1 lb. fresh clams, or (I use 3 cans chopped clams with juice and 1 can chopped with clams drained)
  • 1 cup diced onion
  • 2/3-cup diced celery
  • 3 cups diced potatoes (3-4 potatoes)
  • 2/3-stick butter or margarine (about 5 tablespoons)
  • 3/4-cup flour
  • 1 to 1-1/2 tsp. salt
  • 1/2-tsp. sugar
  • 1/2-tsp. pepper
  • 1 quart whole milk
  • 1/2-pint whipping cream
  • 5 or 6 strips bacon, fried until crisp and drained thoroughly
  • salt & pepper to taste

Directions:
Place vegetables (onion celery & potatoes) in a 4 quart pot; add enough water to cover. Simmer until vegetables are tender.  In a 2 quart sauce pan, melt the butter. Add the flour and a little clam juice so it is easier to mix. Blend well and cook a few minutes. Add the milk and cream. Stir until smooth and thick (until it gets to a slow boil).  Add the white sauce to the undrained vegetables. Add the clams, the finely crumbled bacon and seasonings. Simmer 15 minutes.  Serve with saltines crackers, oyster crackers or bread.

Recipe for "Basic" Oil And Vinegar Salad Dressing

Ingredients:

  • Oil - 4 parts
  • Water - 1/2 part
  • Spices - pepper, basil, lemon juice, etc.

Directions:
Mix 1 part vinegar (clear, red wine, or garlic type) with 4 parts oil (vegetable, peanut, or safflower) and 1/2 part water. Add pepper, tarragon basil, oregano - whatever spices you like best.  Mix well before serving.

Recipe for Onion Dip

Ingredients:

  • 8 oz. sour cream
  • 4 tablespoon of dried onions

Directions:
     Add dried onion to 8 oz. of sour cream.
Mix thoroughly and serve chilled.
     This can be used straight as a potato chip dip or
as a salad dressing if you add some oil and vinegar.

Recipe for Red Bell Pepper & Cheddar Spread

Ingredients:

  • 1/2 small onion, quartered
  • 3 large cloves of garlic, peeled
  • 2 tsp. olive oil
  • 2 red bell peppers
  • 1-1/2 cups cheddar cheese or sharp cheddar cheese, grated and packed to measure
  • Dash of cayenne pepper
  • 2 tbs. chives, fresh, chopped

Directions:
Preheat oven to 375 degrees. Place onion and garlic in small baking dish. Drizzle with oil. Bake until soft, stirring occasionally, about 50 minutes. Cool. Meanwhile, char peppers over gas flame or under broiler until blackened on all sides. Cool 10 minutes. Peel and seed peppers; pat dry. Place all ingredients except chives in processor. Puree until almost smooth. Transfer to bowl. Stir in chives. Season with salt and pepper. Cover and refrigerate at least 2 hours. (Can be prepared 1 day ahead.) Makes about 1-1/2 cups.

Recipe for Wine & Cheese Bread

Ingredients:

  • 1 cup plus 2 tbs. all-purpose flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. cream of tartar
  • 1/2 tsp. salt
  • 1/8 tsp. baking soda
  • 1/4 cup instant nonfat dry milk
  • 1/3 cup vegetable shortening
  • 1 tbs. sugar
  • 1 tbs. minced onion
  • 1 egg, beaten
  • 1/4 cup milk
  • 1/4 cup white wine
  • 1/2 tsp. dried oregano
  • 1/4 cup freshly grated Parmesan cheese

Directions:
Sift together flour, baking powder, cream of tartar, salt, soda and dry milk. Cut in shortening until the mixture resembles coarse meal. Add sugar, minced onion, egg, milk, wine and oregano. Mix thoroughly. Spread mixture in greased 8 or 9-inch round pan and sprinkle with cheese. Bake at 425 degrees for 15-20 minutes or until a wooden pick inserted in center comes out clean.

Yield: 8 Servings

Recipe for Whipped Cream

Ingredients:

  • 1 cup heavy or whipping cream, cold
  • 2 tbs. sugar (optional)
  • 1/2 tsp. vanilla extract (optional)

Directions:
Beat the cream in a large chilled mixing bowl until it starts to thicken. If you use it, gradually add the sugar and vanilla while continuing to beat. The whipped cream is ready when it holds a stiff peak. Be sure not to over beat or you'll have butter.

Yield: 1 Pint

Recipe for Mrs. Dash Salt-Free Seasoning Blend

Ingredients:

  • 1/4-cup minced onion
  • 4 tsp. dried vegetable flakes
  • 1 tbsp. garlic powder
  • 1 tbsp. dried orange peel
  • 2 tsp. coarse ground black pepper
  • 1 tsp. dried parsley
  • 1/2-tsp. dried basil
  • 1/2-tsp. dried marjoram
  • 1/2-tsp. dried oregano
  • 1/2-tsp. dried savory
  • 1/2-tsp. dried thyme
  • 1/2-tsp. cayenne pepper
  • 1/2-tsp. cumin
  • 1/2-tsp. coriander
  • 1/2-tsp. dried mustard
  • 1/4-tsp. celery seed
  • 1/4-tsp. Kool-Aid unsweetened lemonade drink mix
  • Dash dried rosemary

Directions:
Combine all of the ingredients in a small bowl and stir well. As you stir, crush the leafy spices for a finer blend. Store the spice blend in a covered container or a sealed shaker bottler. Makes about 2/3-cup.

Tidbits:
It is best to use a mortar and pestle to crush the minced onion, vegetable flakes and rosemary before adding them to the mix. If you don't have one of these handy kitchen tools, you may also use the back of a spoon and a small bowl.
